Positives:

1. Extremely well built Solid precision latches make it sound like a Mercedes car door when you close it.

2. Intuitive Very user friendly. Easy to figure things out without having to pour over the owner's manual, unlike a lot of other microwaves. The time knob lets you quickly dial in 10 second increments of time, or you can let the machine autosense when it's hot using the reheat mode. It has a digital readout which tells you the next step in the process on certain options and provides status of where you are at in the cooking cycle as well.

3. New Technology The Inverter Technology provides much more even heat, with very few hot spots. When I warm hard refrigerated quarters of butter in the morning so I can spread it on my toast, it softens evenly, unlike my previous micro that melted a big hole in the middle and left the rest hard. In the defrost mode, the food is thawed evenly, unlike the cooked edges that some micro's leave.

4. Performance This machine cooks quickly and evenly and when you combine the micro and convection its extremely fast. In the combination mode the micro power is dropped to 30% and then combined with full convection heat to cook quickly and evenly. Lots of other features...the keep warm option, the broil and bake options, the easy to use dials, digital temperature guage, great recipe book, cooking recommendations, and owners manual.

5. The Look Very sleek and very professional. Easy to clean and a kitchen show piece. You'll gets lots of compliments on it.

Negatives:

1. Size As with all of my appliances I wish it was a bit larger, but it WILL allow a 9X13 rectangular glass casserole to rotate.

2. Trim Kit Mine is also a built in, so I had to buy a separate trim kit which was not included in the price.

3. Customer Support Panasonics only big mistake with this product, as they appear to have outsourced customer support to an overseas group. I had inquired about use of the wire rack when doing straight microwaving. Conflicting answers. Agents hard to understand and not very knowledgeable. Not sure my first contact even knew what a microwave convection oven was. All she could do was read a script. I know Panasonic feels that have to do this to remain price competitive (like many other companies out there) but it's certainly the weakest part of their product. Lets hope congress takes away the incentives and starts penalizing companies that ship jobs overseas.

All in all, it's a great second oven for baking, cooking, reheating, defrosting, letting bread rise, keep food warm during meal prep, etc. Great purchase. Highly recommended if you're looking for the best.

This is a very user friendly microwave. If you only use the microwave function, I am sure you'd be happy with it. But it's also a handy little oven. I have made pizzas, cookies, and even a pork loin roast in it! I cooked the pork loin using the combo cooking function (microwave plus convection) just to test it out. The results were very good; a nice moist roast. A 14-in round pizza pan or stone fits in it and also (just barely!) a 9x13 baking dish. And yes, you CAN put metal pans in it when in oven mode. When we first got it we set it up on the counter in our main kitchen for a couple weeks and played around with it. Then we moved it to our newly renovated "bar" in the basement which truthfully is a small, very functional kitchen. This oven is a great solution as we can use it for popcorn, etc. in microwave mode, but also bake pizzas. Another idea I haven't actually done yet is to use it to bake or warm a casserole for a big holiday dinner when my main oven is busy cooking a turkey or something. In fact I like this oven so much I've decided that when we renovate the main kitchen I am NOT going to opt for the double wall ovens but instead get a regular range plus another one of these and then I will have 2 ovens plus a microwave, basically! I think it's a wise investment and a very excellent product.

I purchased and installed this microwave for a family member. We looked all over for a high quality built-in (above the oven, aka cabinet mount) convection microwave. The GE Profile and Advantium lines were very poorly rated online and did have a very good repair history. It's tough if you want a large microwave (capable of spinning a 9x13 dish) that is convection and has a good repair rating. After seeing that the selection available in the marketplace is poor (We looked at Sears, Best Buy, Home Depot, Lowes, and at a "Factory Direct Appliance" store). All basically sold very few cabinet mount microwave and those that they did have were either a.) small and very cheap or b.) GE Advantium and very expensive ($1200). Since the Advantium has a very low customer rating all over the web, we decided it wasn't worth the money.

After reading online we noticed that approval ratings of Panasonic Microwaves were very high. They use a different style of microwave element that they call an inverter. This means that, when using lower power levels, the microwave doesn't turn on and off the element. For example power level 5 on almost every microwave means the element turns on for 2 seconds, then off for 2, then on again. This means that delicate foods come out screaming hot in places and cold in others. The Panasonic has a proprietary element that actually has adjustable amounts of power it can output. This is something that sounds like marketing but in this case it is truly unique and directly beneficial to the customer.

The "sensor" cook option works really well. We followed the directions to bake a potato. The microwave instructs you what to do on the display. The result was a large perfectly well baked potato in about 90 seconds all managed by the sensor. I was shocked at how well it worked and how fast it was.

Be purchased the mount kit (the unit is for countertop use out of the box). The kit, while expensive, is very high quality and well designed. It was easy to install and looks great. It matches the Samsung fridge perfectly and is neither cheap looking nor "showy". It, like the microwave, is very austere and modern looking without being too "high tech" looking.

I'm VERY pleased about this microwave and think that its a good value for its price. It comes with racks and ceramic turn table. The interior is all stainless steel. Overall I can't find a place that Panasonic cut a corner in the microwave, accessories, or the trim kit. For the price (less than half the price of an Advantium) the build quality is perfect.

I purchased this convection microwave because my Sharp gave out after no less than twenty years of faithful service. Thanksgiving is two days away and my family has always used the convection microwave to heat or re-heat casseroles, appetizers, etc. I was thrilled by Amazon's fast shipping! It came right on time, but sadly the product just isn't what I need it to be.

The first thing I did (after set-up, of course) was test the convection temperature using a regular oven thermometer. I set it to 400 degrees, but it beeped to tell me it was preheated at 350 degrees. The family joined me in consulting the microwave's directions again, and finding no error there we considered a problem with the thermometer. After several shuffles between our oven and the new microwave we decided the thermometer was fine (even after it's tragic fall from the counter days earlier), but bought a new one just to be sure. Again, with a brand new oven thermometer, we had the same result. The bottom line is the oven heats 25-50 degrees lower than it says it can.

While this may not be a problem for many, it certainly is for me. Has anyone else experienced this problem? I am trying to decide if I should call out for repair service, or if I should send it back and find another product. I'll update if a call to the repair service fixes the problem.

First, I'd just like to say that Amazon is great! They took the defective product back with no problem, and shipped another one immediately! Thanks, Amazon!

I got it on Friday, and it has been doing great! The first must have been defective, so make sure you give yours a test run with a thermometer!

If you are having a hard time selecting a moderately price, but well constructed fan for either your home or office, this is the FAN ..actually the ONLY fan you should purchase. Two years ago, I purchased a typical inexpensive 20" round floor fan with "turbo" capacity. The unit was made with ALL PLASTIC materials including its blades. Last week, I accidentally tripped over the chord while walking passed it & it tipped over & one of the plastic blades broke right in half. I couldn't believe it..that quickly...it broke. So, I had the dilemna of finding a replacement one ASAP since New York city was entering into a 3-4 day heat wave. So, I researched a few well-known retailers' websites to find there were so many models to choose from with various pricing from as low as $19.99 to $09.00, I just couldn't make up my mind.

I knew I couldn't nor did I want to pay more than $50 for a good fan. And, if I did invest a little more in ONE...i wanted it to be made of chrome with steel blades....NOT plastic. Well, I couldn't find any chrome/steel blades for less than $79.99. Still too high for my budget, I called my local hardware store in my upper westside neighborhood & the mgr. was kind enough to listen to my specifications & without hesistation suggested I buy this fan. He guaranteed I would like the fan...that it is very reliable...with high velocity.....steel blades....made of ALL chrome with 3 speeds & wouldn't take up much floor room. It was an industrial made fan. So...based on these specs & features, I made the purchase. Fortunately, it was priced within my budget.

Well, the store mgr. knowing I was homebound & unable to walk a block to the store delivered the unit himself..did assembly it for me...a few screws here/there...which took all of 5 minutes. He then plugged into the outlet for me..turned on the fan showing me the 3 settings. That was on Friday afternoon (June 29th)...& I have been running this fan every since...24/7. Since my current air conditioner is not working & I need a replacement ASAP...this fan was my only way to cool down the room making it more bearable. Well, after using this fan for the past 4 days....I am amazed on how well it "cools" off my very large studio apartment no matter where I sit. This fan has an incredible strong motor making it quite efficient to run. It'just perfect. It comes with with a simple owner's manual (more like a pamphlet) instructing you on cleaning & maintence.

The only drawback is there is no warranty on this unit from the manufactuer, however, I spoke to Windstream's customer service representative who advised me to keep the receipt from the store & if I have any problems with it over the next several months, please call them back & they will help me....."not to worry"...they stand by their product. Well..you can't ask more from a good manufacturer than that kind of promise. So, you know the unit is 140 Watts which is quite powerful & efficient. The manufacturer ONLY produces FANS so they are exclusive to the design & production of fan units ONLY catering to both large corporations, plants, & now homes.

If you try this product, i know you will NOT be diaappointed at all. Believe me..I am hooked. The quality & constrution of this product is indicative of manufactueres's high standards of 20 years ago. Forget the plastic ones...even the most popular brands. They are a waste of monies. WINDSTREAM is the one to buy when you want a chrome/steel blade fan designed to last for many years. This is a terrific product...& this particular model works quite well in my very large studio apartment or any large room & won't take up space. I am so very happy with it! We are entering a 2nd heat wave in the city this week...but I am keeping 'COOl' with my Windstream fan.

Weber Style 32903 Professional Grade Grill Pan

Weber Style 32903 Professional Grade Grill PanWe love to grill vegetables. Had an old non-stick type pan, but it got rusted thru and was unsafe to use. I finally settled on this Grill Pan. Frankly it is the best twenty bucks I spent.

The stainless steel will discolor if heated too much, but cleaning is not too bad. The first time I used it without oiling the pan, cleaning needed quite a bit of scrubbing. I ended up using oven cleaner (Easy Off) and it worked pretty well got all the crud off. I now oil the pan before putting it on the grill and clean up is not bad. The advantage of stainless steel is that with a bit of care it will give good service and there is nothing to flake off.

I also bought the veggie basket and use both interchangeably. The lips all around are great, I just use a spatula to lift the veggies to a serving dish.

LOVE: Quality of construction; Cost; Raised lips all around; Material

HATE: Cleanup is tough, but it is no tougher than with so called non-stick pans had one.

Would I recommend it definitely; I plan to replace mine with a similar one when this one goes (or I get tired of it)

I got this to grill veggies and other smaller stuff that might fell through the grates on my gas grill.

After the first couple of uses (and subsequently leaving the pan on the grill for a few days without cleaning it), I noticed some brown discoloration that looked like rust on the surface.

I'm still not sure if it was rust or not, but I got the pan hot and sprayed it with olive oil and wiped it down with some paper towels. That got rid of the rust color and it hasn't come back.

Now the pan is a nice dark brown color, and I just spray with oil and clean it with the brush before use. It stays on the grill or under the grill when not in use.

Other than that, it works as a pan should. Stuff cooks when you put it on there, and it doesn't stick as long as you oil it at a higher temperature than you cook at.

Gets a 4 star since it is hard to clean grilled on residue. The openings mean that food like fish do not slip between the grates of the grill. Heats evenly in accordance with your grill. Only downside is we have to let it soak to get residue off. Non-stick would be better.

This grill pan offers best quality for the $$$. Heavy gauge and shallow depth allow for easy turning of vegetables etc. Only complaint is that it a little too large for my Weber BBQ. It leaves very little room for the grilling of other items, i.e. steaks, chicken, etc.

This is truly grilling made easy you can throw anything on this pan and you're good to go: veggies, baked potatoes, flakey fish.

I agree with the other reviewer about cleanup being a little tough, but truly it is no tougher than all the other stainless steel cookware we use it's all a PITA but worth it in the long run.

George Foreman GRB48B G-Broil Electric Grill with 48-Square-Inch Cooking SurfaceI've used a different sized foreman grill in the past (I believe the GR10ABWI which was more square shaped) this grill is really quite rectangular, so it seems like its width is too short. However, in most cases you aren't cooking large, square pieces of food. This gets the job done and has a nice feature of being able to suspend the top part over the food (without touching it) which is good for melting cheese. What George Foreman lacks in creativity for naming his offspring, he surely makes up for by inventing such a great grill!

The G-Broil is just like the other George Foreman Grills except it has the ability to lock the top hot plate 3inches or so from the bottom. This will allow you to broil smaller stuff. I would highly recommend you get a George Foreman with removable hot plates for easy washing. Putting the entire grill in the sink (cord and all) is very awkward.

Bought this thing for $50 at Walmart.

Pros:

Easy to use.

Adjustable heat settings.

Big surface area for grilling for the whole family.

Cons:

Timer broke down on me after 3 months of use. I looked at the owner's manual and I guess I committed the cardinal sin of forcing the timer dial off. It's kind of like resetting the trip odometer in a '73 Volkswagon while the car is moving--you'll break the odometer every time. Guess what, George, there's a reason they don't make 1973 VWs anymore. The grill (and the car) have to be smarter than the idiots like me who use them.

Conclusion:

Who knew that buying a fat reducing grill from an overweight boxer could be such a mistake? Like Mike Tyson said, "Yes, time flies. And where does it leave you? Old too soon. Smart too late."

I seen on YouTube that you don't need anything and the can can hold it up however... having this Beer-can Roaster makes it very easy and worry free in terms of it falling over. Just bought one for my parents and now going to buy another one so I can cook 2 chickens. No regrets with this item and made it easy for me to get into making beer-can chicken

NORDIC WARES 365 INDOOR/OUTDOOR BEER CAN MARINADE CHICKEN ROASTER is well made and should hold any chicken upright well, for beer can roasting. BUT, I tried using it in Weber's 22.5" Gold grill and the grill, top inside of the lid to the surface of the wire rack isn't deep enough to hold the chicken and close. The grill top itself rests on and slides off any chicken sitting on the Nordic Ware 365 roaster. BUMMER, and, I believe it may well be the same for any beer can roaster I might purchase for use in the Weber Grill. I'll shop a little to try another. Otherwise I'm sure this product should do the job its advertised to do. RSBlain

Calphalon Simply Calphalon Enamel Cast Iron Panini Pan, RedTried the same prime rib eye from Costco at two different friends houses. Once was grilled on an outdoor grill, and once on a pan. Both tasted bad and looked bad. I decided to try the same steak myself so I went out and got this pan. Unbelievable pan. Followed the instruction to heat up the pan by letting it sit on medium heat for few minutes, then laid down the steak. The wonderful sound of sizzling started to pop. After 5 minutes, I turned the steak. OMG!! Beautiful grill mark, and the steak looked unbelievably tasty. I grilled the steak for about 20 minutes. 5 minutes on each side, then 2 minutes each side twice. Sat it for another two minutes. It was a perfect medium well, and it was my first time grilling!! Never realized the prime rib eye from Costco can taste this good.

The couple down side for this pan is the weight and cleaning. It must weigh at least 15 lb. Cleaning is quite a hassle, but it helps if soak in water.

Over all, I am very satisfy with the pan.

After owning this pan for more than a month, I learned few more things about iron cast pans. Apparently, it's not wise to soak the pan in water so I wash it in running warm water and use a scrub to wash it after it's cooled now. The pan does seem to require seasoning after use. I noticed few rust spot after first few uses without proper caring. Grilling with this pan is fun, but the caring part is not so fun.

HAIER 1.3CF 1100-Watt Microwave, Stainless SteelThis microwave was the worst thing I have ever had which completely surprised me because we had a Haier fridge at my work that was a beast & lasted forever (& is still working).

I received this as a wedding present & we started having problems from the first week.

First, the stainless steel on the outside started to rust, I was able to clean it off & chalked it up to the fact that we live in Louisiana so the humidity probably got to it.

Second, whenever we would cook food it would steam up so bad in there that it would leave puddles of condensation in the bottom of the microwave.

Third, the paint started to peel off the inside under the turntable wheels.

Then the microwave became self aware & figured out that it's warranty was up & it decided to act like it was possessed by a poltergeist. Whenever you close the door it would automatically turn on, the light would come one, the turntable would start turning & the microwave would make the whirring noise associated with it cooking, but it wouldn't cook. You would have to close the door a certain way to get it to not do that. After awhile closing the door a "certain way" no longer worked, you would have to push the door in while it was on to make it cook something. We just said "EFF YOU" & got rid of it.

Even without all the problems it was still a huge pain to clean the grilling element inside & when you did try to grill something it would take 10-15 minutes to grill some bread with garlic butter on it. We ended up just using our oven for all of our grilling needs because it just wasn't worth the hassle of using the grill. Plus to even get the grill to work you have to press thirty thousand buttons to get it to the right one (while trying to decipher what the stupid icons meant in the manual), then it would stop every 5 minutes for you to flip the item (even if you didn't want to or need tothere was no way to turn that off) & it would take FOR-EV-ER.

Seriously, take this review into consideration when thinking of purchasing this. It's a cumbersome, faulty, confusing, space hog that routinely gets possessed by poltergeists & has a worse grilling/toasting capabilities than something you could make out of tin foil & wishes.

Their commercial appliances seem to be awesome, but their home appliances (most specifically this microwave) are garbage!

I purchased the "Beast," a year and a half ago, shortly before moving into my space efficient, uber cool pad. I had no idea (guess all that stainless prevented me from visually observing the size of this monster, how huge it is. Also I didn't even entertain the thought of returning it because even though I could have sent it back, The Beast weighed in at 37 pounds plus 20 pounds of shipping materials. A total of 57 pounds that I'd have to pay in shipping costs out of pocket to return Zelda. I must say, Haier got me every which way. From the outstanding photos to the great copy, they had me hook line and sinker. And whoever thought to offer returns as an incentive is a genius. They got this dumb blonde consumer who will have this Beast until the cows come home. If you really want to buy one, I'll give you mine--free. Come get this whale out of my kitchen!

This is a big pile of junk. I have owned it for a year or less, the handle broke off, the inside is rusting and the paint is chipping off. I have NEVER seen such poor quality in my life. I will be throwing it in the dumpster and replacing it as soon as I can find one that I want.

The interior of this unit started cracking 3 months after purchase. I went through 4 months of hassles to get a replacement. When it finally arrived the replacement was defective. I'm waiting again for a replacement for the replacement!

It's now 3 defective replacements and 8 months later. After the 3rd replacement arrived damaged and I had to insist for a refund I was charged a "10% usage fee". I was charged 10% for using their piece of garbage for 3 months before it broke.

Only buy from this company if you have money you can flush down the toilet and enjoy hassles.

Seattle Seahawks Grill Mat by Fan MatsI ordered the mat thinking that the mat would cover the entire length of the grill as pictured. My grill is the same type with burners on both ends. When the mat was delivered and I opened the package, to my surprise the mat is half the size and does not cover the length of my grill. This was to be a father's day gift, I am very embarrassed to present this as a gift.

Product arrived sooner than expected and is just as it was described. Perfect!! Made for an awesome Christmas gift for my avid Seahawks fan!!!! This is the second one I've ordered and both were awesome!

Ronco Showtime Standard Rotisserie and Barbeque Oven WhiteI have this same model. The rotisserie works well and if you follow the directions carefully, the end results will be delicious. Just understand that once purchased, you can't depend on any customer service at Ronco. They don't answer emails. They don't answer the phone. If you order an accessory, it may never arrive and you won't be able to find out why. If you want an extended warranty, buy the one offered through Amazon because I can't imagine shipping anything to Ronco; it will end up in a black hole.

I absolutely love my Ronco Showtime Rotisserie Oven. Now that I have it, I wonder how I ever cooked without it.

I am very picky about my kitchen appliances being easy to use and easy to clean! There is no point in having a delicious dinner if I have to spend hours cleaning up a mess afterward. I must say, this oven could not be any easier to clean. The pieces & accessories are all dishwasher safe.

The first night I used it, I cooked a chicken that was just under 5 pounds. It took exactly as long as the instructions stated it would for the internal temperature of the chicken to reach 180 degrees. The thermometer is included. The elastic food ties are ingenious! No more strings cutting into your fingers as you fight to get them around the chicken.

I could not believe how good this chicken was. I didn't do anything special to it. I only used salt, pepper, and garlic powder on the outside of the chicken. Then, I put it on the rotisserie, set the timer, and watched it spin around in amazement. Every single bite of this chicken was juicy! My daughter and I ate it for three days, and even when it was warmed in the microwave, it was still tender and juicy.

I highly recommend this item to anyone who cooks several meals a week. It does a lot more than just rotisserie chicken! The kabobs we made in it were just as delicious as the chicken.

In 2000, I went through an unexpected divorce. During the separation, I asked the ex if I could have this machine, because my culinary skills were, shall we say, very limited. We had received it several years before as a Christmas gift from my mom, but had never really used it.

People, it prevented me from having to subsist on take out and frozen pizza! When I had weekends with my daughter, she was blown away by the dishes I was able to prepare.

Since then, I have learned a bit about cooking, but I still use the rotisserie several times a month. Living alone, I can't justify buying a whole turkey. But a turkey breast, properly seasoned, will come out of the machine tasting as if a master chef had prepared it. Believe me, good quality frozen veggies are delicious if the steaming tray is used. Using the basket, well seasoned chicken pieces cook in an hour, and all the marketing propoganda heard on the infommercial turns out to be true. Marinated leg of lamb? I'm making myself hungry, just typing this review! There have been family get-togethers at my sister's house where we have had both hers and my rotisserie going full blast.

It isn't expensive. It isn't high tech. It isn't terribly sophisticated. But...it works, very reliably. Anyone will be able to get excellent results with it in a short amount of time.

Very rarely, you get more than what you paid for. If you are "on the fence," trying to decide whether or not to purchase, go ahead and jump; you won't be sorry.

This is an awesome product. Very easy to use and pretty much idiot proof. Everything I cook in this comes out great; chicken pieces, whole chickens, beef roast, pork tenderloin....you name it. I have been using mine for years now and I still think its great!

They reason I gave it a 3* is because the "Non-Stick" surfaces are NOT non-stick. Food sticks to EVERYTHING!!!! The lobster/vegetable rack is the worst. A nightmare to clean. The stuff used to coat the metal is more like a non-stick looking paint. It lasted about 4 months and it was gone. I have to use SOS Pads and a wire brush to clean my racks now. Even before the very sticky non-stick paint came off I had to soak the stuff for hours and it barely helped. Pam cooking spray didn't help either.

It works like a dream.....it cleans like a bad dream.

Ronco used to make this product (smaller), and I had one that did Roast Chicken better than anything so simply. That was years ago.

This model came defective when I opened the box. They are not useable because one end of the spit wheel had a detached hub. The rivet and the covering of the rivet were rattling in the box. I exchanged it as defective, and the SAME DEFECT was present. Frankly, it's a piece of junk, or did I just get TWO lemons in a row???????

DeBuyer Mineral B Element Iron Frypan, RoundFirst off: If you cannot lift heavy pans, don't get these. Instead, I'd opt for high-quality stainless. And if possible a stainless/copper.

With that said, these are truly a lifetime investment item if they are taken care of. Once it's seasoned, you cannot cook a better pan-fried steak. One of the best pans I've used thus far, and I've owned a restaurant.

There are a few suggestions for seasoning. I want to share with you what I do to achieve the best and most successful seasoning of my iron pans, without the sticky residue or uneven seasoning.

What you will need: Water, 3 potatoes, flax seed oil (organic), sponge, and a spare dry towel(s). *FYI: I use Barlean's Organic Flaxseed Oil. There are other brands you can find in your local Whole Foods or organic markets.

INSTRUCTIONS:

1. Once you receive your pan, place on burner and fill nearly to the brim (leaving about 1/2" from the top) with hot water.

2. Next, add peels from approximately 3 potatoes. Let boil for 15-20 minutes. You'll notice the water beginning to darken after about 10 minutes, which is good. You are essentially boiling out the beeswax that is added before shipment.

3. Pour out the water. You may notice a black line where the water level was, that's normal. Use a sponge to lightly scrub the pan under hot running water, focusing on the sides and around the rivets. You are just finishing off what was left over after boiling. If you have dark spots from the potato peels at the bottom of your pan, no worries..it's normal. Towel dry and return to burner.

4. Turn your burner to high heat, and then place approx. 2-3 tsp. of flax oil in the center of your pan while it's cool. Make sure to turn on your exhaust fan if you have one.

5. Rub a very, very thin layer of the oil around the entire inside of the pan with a towel. Make sure to soak up any excess oil. This is vitally important, because too much oil will ruin the seasoning process. Heat until it smokes oh so slightly.

*Since the timing is so different from one stove to the next, in terms of when it would be ready to take off the burner, I say use that (slightly smoking) as a visual to know.

*Do not leave your pan on the burner without watching it carefully. Again, allowing the oil to smoke a lot is not a good thing, and can ruin the seasoning.

You will notice it darkening almost immediately once the oil becomes hot, but not yet black.

6. Allow to cool.

7. Repeat steps 4-6 until your pan is black (about 5-7 layers). Finally, begin cooking!

Your first batch of food should be a meat as this will speed up the maturing process.

IRON AND HEAT:

Remember that iron continues to rise in temperature, thus you can easily burn your food. You will need to get to know your pan in order to find out when to adjust the heat. Ex: If you are wanting to bring it up to a high temperature, turn your fire or heat source to about a MED-HIGH. Once it reaches that temperature, it's wise to drop the heat down to MED about a minute or two after the food has been added so that it doesn't over cook.

Regardless of what I'm cooking, I almost never set my heat to HIGH. It just doesn't drop in temperature fast enough before burning something.

Also, if you add anything cold to your pan it will be stuck initially. You should wait a minute or two until it forms a nice "crust" in which it can be easily removed or flipped. However, once the seasoning is matured, sticking should not be an issue.

FIRST BATCH OF EGGS:

Eggs are a great example of what can happen if you remove or flip your food too early before it has had a chance to form a "crust", and if you set your heat too high they will burn super fast. So, you definitely want to follow the above tips during the maturing process when cooking eggs. Otherwise, you'll end up with a mess. So again, I highly suggest cooking at a very low temperature for eggs, as they will burn or dry out very quickly in iron pans regardless of maturation.

CLEANING AND COOKING UTENSILS:

Wait for several batches of food before you use a metal spatula. If you notice small scratches in your layer of seasoning after cooking from your cooking utensils...don't worry. It will darken over rather quickly and should not cause any issues. Flax oil seasoning isn't real soft, but it isn't indestructible either. So, just be graceful initially.

If stubborn food is stuck to your pan after cooking; add HOT water, bring to a boil for no more than a minute, scrub with a wooden utensil, dispose of the liquid, rinse and then towel dry. Afterwards you'll need to place a light layer of oil in your pan and heat the pan just before it smokes. OR, you should be able to use a non-abrasive sponge under hot running water to clean up any stubborn messes without any worries. However, it's not a good idea to boil water often as it will slow the maturing process.

Additionally, one tip suggests to place course salt in the pan to sanitize it. However, this can scratch your surface rather quickly if it's the beginning stages of your seasoning, so use that tip cautiously.

BTW: You'll know when your pan has matured when hardly anything sticks to the pan, and you don't have to clean it with anything other than a paper towel after cooking.

***Always remember to oil your pan after each use, regardless***

You can repeat one layer of seasoning after each batch of food in the first month or so, or intermittently. This will ensure a nonstick surface that is sure to last through just about anything. The more you use your pan, the more the non-stick surface becomes. Your pan should be broke in within a three months, depending on use.

TROUBLESHOOTING:

~ If you noticed that there is a large area of what looks like a "smudge" after seasoning, then you added too much oil OR allowed it to get too hot. That's okay..if your first attempt failed, you can start the process over by scrubbing with a scouring pad and removing the layers of seasoning. Then proceeding to repeat the step using much less oil.

~ If your pan is really sticky after seasoning, you have added too much oil, the pan didn't get hot enough, or you need to repeat the process. You may have a slight stickiness after seasoning is finished, but that's fine. It's the thick residue you don't want.

***Do not bake your pan using this oil during the initial seasoning process, unless you know exactly how to do it. It can be used in the oven for cooking once you have finished your seasoning however.

Using any other oil or lard to season your pan will/can cause a thick residue because the burning point is lower for one, which is why I strongly suggest not using any other oil. The seasoning will be much "softer" with other oils, and does not work for me in the least bit, nor will it for you I don't believe. The surface becomes much less even and there are simply too many issues with other oils that I don't want to get into here.

And lastly, do not switch out oils during your seasoning process as some tips may suggest, it's not necessary when you use flax-seed oil especially. You have to take into consideration that each oil will have a different burning point, or smoking point, therefore mixing the oils is not a good idea...period.

So, bottom line is that I do not find seasoning by baking is a good idea unless you are experienced in doing it. For most that aren't, it ends up leaving residue because too much oil was added, which is awful to have on your pan. It will scrape off too easily causing a mess! This can cause a lot of frustration and wasted time. I really want people to have the easiest experience and not be discouraged, thereby switching to non-stick inferior pans for sake of ease ;0)

Over the years I have a collection of All-Clad Stainless Tri-Ply, Calphalon nonstick, plus a cast iron pizza pan, so I am quite familiar with the strength and weakness of each type of material.

The stainless tri-ply sears well, has pretty good heat conductivity, can be nonstick if you use good technique(dry and warm up certain type of food before cooking, and use enough oil), but it's a pain to clean.

You are probably familiar with nonstick like Caphalon. They work pretty well, don't sear as well as tri-ply stainless, but is easy to clean. They wear out after a few years and you have to replace them. To me, they have no soul. I mostly used mine for eggs.

I used the cast iron pizza pan for steak, hamburger, and frittata. It's well season and nonstick. The one big draw back is that it weight a ton.

I heard good thing about DeBuyer iron cookware so I ordered a DeBuyer 24cm bluesteel crepe pan as it's inexpensive to try out. It's fantastic: eggs slide off it, and cleaning is just rising with warm water and wiping dry with a towel. So I decided to get the 12.6-Inch frypan to use as my general everyday pan. So far I have cooked steak, stir fry, and seared fish with it. I would say that it combines the best features of all the cooking surfaces I have used so far: it's nonstick, sears better than tri-ply stainless perhaps as well as my cast iron, and weight a lot less than cast iron would have been, and it's easy to clean up. Most of the time to clean it I just rinse it with warm water. If I cook fish or steak I would use boiling water to rinse it, and on occasions I would use a slightly soaped sponge on it. Then I would dry it, and when I am not too lazy I would put a couple drop of cooking oil in it and wipe it with a paper towel. The clean up is much faster than with my stainless cookwares.

But best of all, the steak comes out fantastic, the fish seared nicely, and the side is just tall enough to not get in the way yet provide enough volume to use as a really nice stir fry pan. If you cook for 4 people, this is the perfect size.

I said jokingly to my 5-year old daughter that some day this will be hers as she watch me season it the day it arrived. The truth is this thing will last forever and will be hers some day. There is a satisfaction of owing something that will last for generation and is a pleasure to use. I am now a DeBuyer convert (there may be other brands that make iron cookware that are just as good). I bought a 11.8-Inch crepe pan for omeletes and frittata.

I already use the pre-Bee 10" Mineral fry pan de Buyer Mineral Pan, Fry Pan: 10" which is absolutely great. In the terms of the old hot-rod axiom, "if some is good, more is better, and too much is just right," so I bought this 14" monster. I'm going to have to order a larger "universal" fry pan lid since my old one is too small. I love the little honey bee stamped into the bottom of the pan and the honey-colored dot in the handle. Perfection is all in the details, right? I watched the instructions on U-tube, and even though DeBuyer no longer recommends it, I boiled a bunch of potato peelings for a very long time, and then some peanut oil for a less than very long time. Slick as glass and ready to cook now, but not until a few more family members drop by. This pan is BIG. It doesn't show up in all of the advertising photos, but mine actually has a U-shaped handle on the side opposite the long, flat handle for a two-handed grip to make it easier to remove the pan from the range. The 10" is great for my wife and me, and I expect no less from the 14" version when we have to cook for more than two. I can do scrambled eggs in the 10" with less residue left behind than with my previous "non-stick" pans. It almost doesn't need cleaning. Bacon tends to stick a bit, due to the suger content in the curing process I suspect, so I have to wipe down the pan really well with paper towels after the bacon is done, before I toss in the egg mixture. I love these fry pans. Teflon, get thee behind me!

I just received the 10" pan in the mail yesterday to replace a Calphalon Commercial nonstick pan. I followed the seasoning process per De Buyer. I wish the instructions indicated what temperature to heat the oil to. After a bunch of research online I am still unsure if you are supposed to do this over high heat or medium heat. Anyway, first meal cooked in the pan was 3 boneless skinless chicken breasts. I did not get any sticking. This morning I made two eggs and those did not stick either. It is already starting to develop a golden color. Everything I've read indicates it will get better with each use.

I didn't follow instructions for seasoning this pan. I had only a coating of oil in it and starting cooking this pan on the stove. Went to take a phone call and returned to find the center had oil burnt onto it, an ugly brown spot. Looks so ugly I was disgusted! Tried to get the irregular shaped brown spot off by scrubbing it, then decided to use detergent. I know I wasn't supposed to, but I was upset. Still didn't come off. I decided to now use this pan to fry an egg, using very little oil. I thought for sure it will stick since I broke all the rules and this was the pan's first use. Well! It was more nonstick than any nonstick pan I've ever used. Whaddaya know... the pan is forgiving of my abuse. I guess I'll have to overlook its ugliness.

Edit: Ok, so after my success with the egg, I wiped the pan clean with paper towel. Then I tried making an omelette, and this time no oil added to the pan. When the edges of the egg started to dry, I gave it a slight nudge and the omelette started sliding around in the pan. Was tempted to turn it by a toss of the pan but lost my nerve and used the spatula instead. I thought for sure the reverse side would stick this time since the residual oil from previous cooking is already used up. Nope, still did not stick at all. After that I tried the salt rubbing cleaning and that removed the ugly brown spot. So now I changed by rating from 4 stars to 5.

BonJour Chef's Laser Probe Combo Surface and Internal Digital ThermometerI've only had two days to play with this thermometer, but it certainly seems like a winner. The instructions are sometimes wrong with regard to how to operate the unit (you must press the _trigger_ and the up/down arrows to activate the laser/lcd backlight, not the _mode_ button and up/down), but once you figure it out you'll throw away the booket anyway. It does have high/low alarms (for emissive...not sure about the probe) and will do a high/low/average reading set.

I do not have a reliable way to determine whether the emissive temperature is accurate, but it appears to track closely with two of my other probe thermometers for cold-warm temperatures, and is in the right range for oven temperatures and, well, anything I could find to determine the temperature of. The probe seems equally accurate. Both are quick. The probe is comparable to my polder-look-alike, probably a bit faster to be honest. The emissive temp can be checked in a second or less, and can be set to continuously monitor (which would be useful with the alarms and the hold mode described below). When the probe is off, the unit sleeps after 60 seconds, with the probe on it will sleep after a few minutes. According to the manual, the unit will stay active for 1 hour with the "hold" mode engaged for continuous monitoring of emissive temps.

The laser is cute, but not really necesssary, as the sensitivity cone is 1:11, so at 11 inches away, the unit will read a 1" spot. Not really that hard to aim, and I would think the 1" parallax between the laser and thermal lens would cause error for really precise measurements.

The emissivity is adjustable over a very wide range. I believe you can set it as low as 0.10. The default is 0.95. Organics (per the manual) tend to be around 0.97 or 0.98, and it can be set as high as either 0.99 or 1.00 (not sure about the 1.00).

The unit seems sturdy, and the manual claims 140hrs continuous use on the 2 batteries. Obviously, having had it for two days I can't comment on battery life. Otherwise, its been a ball to play with.

I don't know what more you want from a thermometer. It is wonderful and I love having the probe on the same piece of equipment. I find that I use the infra red more than I expected (no more candy thermometers). It is highly accurated and has more features than I would ever use (it has various modes that would allow you to know Hi or Lo temp recorded plus others. I also have used it trouble shooting HVAC and the laser pointer (turns on or off) is nice when you are pointing to a register 20 feet away and want to ensure that you are capturing the correct temp.

It is fun. Highly recommend it.

p.s. the probe is a pivot function in that it does not FOLD out, but SWINGS out 180 degrees from its storage position. I suspect that this may not be as intuitive as some folks might like, but I have had no quality problems with this over the two-plus years that I have owned it.

The probe worked well for the few times I used it but then it had an electrical problem where it flashed error messages and finally stopped working. I contacted the company and they told me there is no warranty. They said it is a "quality assurance" product which means it is guaranteed to work out of the box, but with no warranty after. Nothing like guaranteeing a product will work when you buy it. It would be funny but for the fact the probe is so expensive.

If you do any cooking and need to know hot hot the oil is or check on how done your roast or whatever is, this is a great addition to the kitchen. I also use it for various other things around the house, including checking the temperature of the bath water. I love using it when frying fish...heat up the oil, point the laser at it and you have the exact temperature needed. I think it could also be used around the house or car to check the temperature at your AC vents, or to see how well your windows or doors are keeping the heat or cold in or out. I am very pleased with the quality and figure this is the kind of product that you wouldn't want to "buy cheap". You can spend more money, however, for most things around the house, it's an excellent investment and looks solid enough to be around for many years. Nice product.

The thermometer works pretty well. The probe was accurate within two or three degrees, and the infrared was accurate within two degrees. It's easy and fun to use. The only change I would suggest is that the probe would read the temperature quicker because it takes upwards of 10 seconds to get a stable reading.

Lodge Logic Pre-Seasoned Skillet

I have 3 teeneage boys that enjoy cooking, and after they destroyed a few teflon coated pans, I decided I would go heavy into cast iron. These pans are indestructible. You can use them in the oven or stovetop, and if you keep it seasoned properly food will not stick. Also, to avoid sticking problems, you may want to remember to allow the pan to get hot before applying oil or food.

As to seasoning, the Logic line now comes preseasoned. But don't make a big deal about this. To season a cast iron skillet simply coat it lightly with oil and bake it for a half hour or so. I have also seasoned these skillets on the stovetop. Cast iron is also great because it does not easily scrap like stainless steel and aluminum pots. Aluminum pans are painful to me, as my teeth fillings react to the aluminum. With cast iron, you won't have this problem. I also take my Lodge pan camping and set it right over the coals to cook. No melted handles or scorched bottoms to mess with.

Let me start by saying we have a kitchen full of 20+ pieces of Calphalon Hard Annodized Commercial cookware. I was always of the opinion that quality cookware carried a price that was justified by the performace of the cookware. So I thought if I wanted cast iron I should look at LeCreuset... wrong! Lodge blew that theory out the window! I can't express how well this simple pan works. Let it get hot and it will hold the temp like nothing else, oven to cooktop. I finally decided to get a good cast iron skillet after hearing Alton Brown (Host of Good Eats ...TV Food Network ...) rave about cast iron for the last few years. He steared me to Lodge, Lodge's web site (lodgemgf.com) told me about the pre-seasoned "Logic" line. This stuff makes cast iron simple. No messing around with seasoning a new pan. Simple care instructions. And clear instructions to reseason should the need occur. At the price these pans sell, there is no excuse to not have one, (or more) in your kitchen. It will soon become your favorite pan. I bought a 5 quart Lodge Logic Dutch Oven at the same time and it is fantastic as well!

After waiting a month to get the thing because it was back-ordered, I FINALLY got to try out my skillet. I love this thing! Most of my cookware is garden-variety non-stick and hardly suited to things like searing steaks or fajita meat.

You can run this pan as hot as you dare without hurting it works great for steaks, and makes an awesome cheese steak. The pre-seasoned coating works as advertised, and the cast iron gives good heat transfer and VERY even heat across the entire pan. I think I'm going to be using this skillet A LOT.

A handy suggestion regarding cleaning that I stumbled across on another website... be SURE to use a hot pad while doing this! Immediately after cooking, fill the pan with HOT water (not cold; you could crack it!), put it on high heat, and bring the water to a rolling boil... this will lift debris off the pan bottom. Dump the water and immediately wipe dry with a paper towel, set on the (turned-off) burner briefly to dry completely, and wipe the cooking surfaces with oil.

Another note want those steaks well-done but juicy? Buy the Lodge Logic 5-qt Dutch oven; the lid fits this skillet! Sear both sides of the steak on medium-high (about 3 min each), then flip, reduce the heat to medium, cover, and cook as desired, flipping the steak once along the way (about 5 minutes per side for a small, well-done filet mignon). Your cooking times may vary, but the combo of cast-iron skillet for searing and lid to keep things moist while cooking works exquisitely. Brown, not black, outside... and tender inside.

and so much more... I really wish I'd known about these when I was single. I would have eaten so much better! But, they come in so handy as junior companions to my 12" workhorse skillet and my two-burner reversible grill/griddle, I am happy to make up lost time with these little gems.

At $10 and change, I recommend you purchase as many as there are members of your family. Or if you're single, buy two... so you can impress dates by serving individual-sized appetizers or dessert! Then ask for two more for Christmas, so you can add a fun, gourmet twist to your dinner parties.

As with all cast iron, even though this is pre-seasoned, it's a good idea to season it again yourself before using. Generally you don't use soap or detergent on cast iron (and NEVER put cast iron in the dishwasher!!), but when I first get a new piece, I hand-wash it with hot water and a tiny drop of mild dish soap. Dry it thoroughly with a dish towel... then, to remove any remaining water that has been absorbed, put it on the stove or in a hot oven for a few minutes so that any remaining water will evaporate.

Then, coat with a *light* coating of grapeseed oil or organic vegetable shortening. Turn the oven on 400 (or higher, if you dare!) degrees. Put your new skillet into the oven upside-down and line the bottom of the oven with aluminum foil to catch any drips. "Bake" for 1-2 hours. Turn the oven off, then leave the skillets in all night to cool and solidify. Your skillet will have a deeper hue and glossy sheen that it didn't have when you bought it. This will make it a bit more naturally non-stick. The more you use it (or if you want, you can repeat the above seasoning process), the more non-stick it will become.

With proper care, cast iron will become your most well-loved cookware. I'm so excited to have added two of these 8" skillets to my Lodge cast iron collection and can't wait to come up with even more uses for these adorable, super-handy little skillets!

This unit works very well in every way, a basket mesh kind of food holder would be a good option, use a drip pan and keep the coals off to the sides, the ring riser/extension is useful for smoking and cooking big things, etc. It is all good, but there is more:

Who do you know who actually has a charcoal grill and a rotisserie? Nobody. If you get one, your guests will be entertained on several levels and you will be the Master. A rotisseries is professional looking, produces unmatched taste and an exciting demonstration-style cooking experience for everyone. Those that utilize them are seen as proficient and competent. Not a bad label for you, eh? Might get you somewhere.

The best meal I ever had was a rotisserie turkey that saved me from starvation after a Hike of Death. Perhaps it can save you or a loved one.

Rotisserie cooking lends itself to the acclaimed high heat, short cooking time technique. Hot coals and the self-basting action work well here. One of the major gourmet magazines cooked turkeys every way known and strongly recommended the high heat way. This is also the suggested method for cooking heritage meats and wild game.

Starting out at 500+ degrees and ending at something short of US government temperature recommendations is the secret. A turkey, for example, is best taken out of the heat at around 170, or less, and allowed to rest. It will go up around 10 degrees after that.

I tie bacon strips onto the breast and add wet smoking wood chips to the coals. Stuff the cavity with an orange and some garlic. Other things could be used, too. I have rotisseried heritage, free range, organic, kosher and regular good quality supermart turkeys with this high-heat method and they have all been good.

Governments and institutions have to recommend a heat guaranteed to kill off any and everything, and prevent lawsuits of course. However, fresh good quality meat does not have to be nuked to the point where you could make furniture out of it. Use a separate thermometer, not the supplied pop-out sensor. I am no professional, but I can say it produces the best tasting food.

UPDATE: Years later, it still works. Here are some things that will help you if you get one of these. First, for a turkey, get two oranges and stick them in the cavities. Then, stick the skewer through them. This keeps the turkey from wobbling around so much as the oranges act like bearings. Also, get some meat wrapping string and spend the time it takes to tie the legs, tail and wings up to the skewer so that the turkey is more like a ball without all sorts of dangling things flopping around. Use lots of string. It is cheap. Know that all the energy of the universe will try to circumvent your efforts, so over-do it with the string. Cut it off with scissors before serving.

Coat the turkey with olive oil. Don't baste it again.

Obviously, don't stuff it!

I don't use the bacon anymore. If you use the temperature recommendations, you won't miss the bacon. It was a pain to tie on and was kind of a waste.

The Polder remote thermometer is nice because the probe is thin and doesn't create a big hole.

I stop at 160 degrees now. That's just me. Remember, you can cook it more, but you can't remove the overcooking.

Learn how to cut the breast meat off. Don't slice it off while it is on the turkey. Instead, cut down right alongside that breastbone. Then cut in from the side, about half-way down the side, straight in. This gives you a big chunk from that one side. On a plate, cut it in slices, across it, across the grain. So much more professional and better in every way. And it is easier. If you are having trouble visualizing this, you can google up a demo video or illustration.

I saw a TV show where it was demonstrated that soaking the chips makes no difference, so I don't anymore. A couple of handfuls gives a nice, not overwhelming little smoke flavor. You may want more, or none.

The Weber a fine device and one that surely will make you the rockstar of turkey cooking. Imagine how pathetic your relatives will seem when they take their sad turkeys out of the oven after hours of worthless basting. There will be murmuring and eye-rolling from those who remember yours. Make sure you tell the others, loudly, how you just sit around drinking while your turkey rotates effortlessly around, cooking perfectly. By the time the hosts are finished with excuses as to why their turkey sucks, again, you will be elevated to near rock-god status. Humiliation is an essential part of any family holiday and you want to be the one doing the humiliation.

I love this thing. I just got it, put two chickens on, and 1.5 hours later was eating the juiciest, tastiest chickens I have ever had. No comparison with my smoker or beercan style...the rotisserie beats either method hands down. I had debated the purchase, thinking that this was just going to be another gadget I would use once and then never again. I had been told that the meat comes out no differently than if you just lay it on the grill, and that the motors on rotisseries are loud and obnoxious. Neither statement could be further from the truth. The meat is juicier due to the self-basting aspect, and the motor on this unit is virtually silent. Also, having the counterweight is a great plus for irregularly shaped items. This is a great purchase, and very well built in typical Weber fashion. Highly recommended.

We have owned Weber barbques for years and the rotisserie is an important accessory if you are doing chickens and turkeys. They are so much more juicy with the rotisserie than just sitting in the rack. Two chickens at a time (actually you can to three) should be about the same size for cooking time. Bigger are better, at least 4 lbs each. They will take about an hour and 20 minutes. Turkeys can be up to about 12 lbs. A pop-out timer is recommended, you can buy them separately if the turkey doesn't come with one. Hickory chips for smoke are good. Use lots of salt on the skin so the smoke will flavor the meat (and don't eat the skin:-) Be sure to catch the drippings in a Weber pan for the gravey.

Weber's rotisserie couldn't be easier to install and to master. Instructions are very clear.

So far I've spitroasted a leg of lamb, a pork shoulder and a chicken, and all came out juicy, crispy and flavorful.

The motor works very well. Only weird thing is the very short length of the powercord, a decision only a lawyer could have made. This way, if you trip on your extension cord, Weber won't be liable. I can't see how you could possibly use this rotisserie with the included cord alone. If you happened to have an outlet close enough to your ideal grilling spot, the grill would be way too close to your house!

I concur with all the other reviews-this thing is da bomb!! Try pork roast on there-it is to die for. The rotisserie has never let me down, whether I'm cooking chicken, pork, prime rib, roast beef, lamb-you name it.

Now mine is about 3 years old and the skewer does get a bit charred especially if you use smoke often. You need to SOS it and then you are good.

You'll never buy one of those black plastic trayed chickens at the grocery store again! Superior to ANY restaurant!
