Iwatani Torch Burner Professional #Cb-tc-proI've only been using it for a few days now, so if it falls apart in the next few months, I'll amend my review.

I primarily use this for Sous Vide cooking, which requires most meats to be seared when they are done cooking. When you are making 5-10 steaks at a time, and want to serve all of your guest at once, a reliable torch that works fast is a must.

I had been using a propane torch ($12 at Lowe's) and finally got tired of the flame-outs and uneven burn. Let me say, this torch is awesome. It puts off way more heat than the propane torch, does not flame out no matter how fast you move it or what angle you hold it at. I bought the GasOne 12-pack of butane cans (about $2 per can with shipping included), and a dinner of 5 steaks seemed to use about 10-15 percent of a fuel can.

Its very hot, and has a nice wide flame, resulting in fewer passes when torching a steak.

Pros:

-Cheap Fuel

-Steady, Hot, Wide flame

-Adjustable flame intensity

-Big. It sits well in the hand with a fuel can attached

-Trigger for lighting the flame. No lighter or sparker required

-Trigger does not control fuel flow. I thought this would be bad at first, but it would actually be a pain to have to hold the trigger down for extended use

Cons:

It didn't come with a Ferrari.

Great torch with power. The flame is around 22 cm when full throttle. I use it for cooking (creme brulee, searing beef, charring eggplants for Middle Eastern food, grilling skin side of fish fillets for interesting Japanese touch) and it works perfectly. Just remember to adjust the flame so it is a sharp blue. If the flame is yellow the combustion is incomplete and some of the gas particles will deposit on your food item. No matter what, there will be a slight residue taste using this torch. I think of it being part of the torched taste now. The torch clips on really easily on a small gas canister and off you go. The build of the item is very good. I believe it is made in Japan.

Other uses:

Emergency gas hob. If you use bottled gas and run out, just put this burner on its side on the hub under your pot.

Killing kitchen ants. I also have lizards in the kitchen and they eat the ants so there is no need to clean up. Just zap the ants.

Bending plastic. I bent a plastic dish washer so that I can use it to clean my espresso machine.

Lighting candles. If you put the torch on the lowest power you can use it to light old fashion candles.

Lighting fires. If you have a fireplace this burner can be used to start the fire, unless you're a traditionalist.

Torture. I have not used it yet, but if I catch an Al Queida terrorist it might come in handy.

NEW USES

Killing small flies. If you got those small flies hoovering over food scrap, the torch is great! A bit harder to kill normal house flies with the torch. You might run around accidentally putting fire to your house.

Cockroaches are also a good target if you just have one of them once in a while. If you have more of them, you really need to take other measures. Burnt bug does not smell pleasant.

Killing tree plants that continued to grow in the cracks in the cement of the driveway. Surprisingly efficient. Naturally it wont work on weeds, which are much more resilient.

Peeling hard boiled eggs. You know the situation when you steal some eggs from your neighbour's chicken, then they are too fresh to peel properly. I got this suggestion from Modernist Cuisine at Home.

TOTALLY MEANINGLESS USES:

Testing the amount of oil in a citrus peel.

Burning off foam from the dish washing liquid in the sink.

Manually lighten the gas stove after first letting out three seconds of gas. Makes for an impressive flame lasting a fraction of a second.

Scaring people in general. Like those 20 dull individuals that read this review and gave it negative feedback.

And finally, don't buy this torch as a present to a kid. Do not even use this product creatively anywhere near a kid.

I had concerns initially as this torch burner only fits on certain butane canisters which are hard to find anywhere locally via internet search. The torch burner itself is not expensive, but the shipping and handling of the butane canisters sold online are too high to be ignored for the overall cost. Luckily, I found out that Costco business centers carry them ($4.99 for 4 cans) as lots of restaurants are using the butane burners which use the same type of canisters. So, without a second thought, I placed the order immediately.

This is my very first torch burner, but I was too eager to try it before I read the instruction (printed on the back pages of the folded cardboard). And it just works perfectly. That tells how intuitive and easy to use it. I have been using it to sear meat prepared via Sous Vide and heat brown sugars on the custard of Creme Brulee. I am very happy with its performance and would highly recommend it.

I liked it because it has a longer nozzle than other product ,an air adjusting feature and made by Iwatani whichi is a solid

company.

but its self ignition worn out upon heavy usage.

I used it for my job every day to torch roasted pork for 8 to 10 times a day about 20 total miniutes and its self

ignition somehow run out. I started to use it about 2 years ago and I'm using the 3rd one now. I probably will

continue this product until I find better torch tnan this but I say this product is not for heavy duty.

I have had my Iwatani torch for over 3 months and use it daily and sometimes several times a day to finish sous vide dishes, to "barbeque" ribs after cooking low and slow in the oven, and for other general cooking use. I have tossed my other kitchen torches in the dustbin. The Iwatani is a solid heavy professional device, and has the output of a jet engine [no lie], with the flame easily 5 times larger than the other products being sold here, especially the wimpy creme brulee type of torches. As a result you can finish broil chicken or steak quickly with ease. It burns very clean and does not use fuel excessively just a superb design all around. In truth I use this now in lieu of my broiler the flame is that large and hot. I just bought a second one today, to have in reserve and use at a second location. I am not big on doing reviews and usually have a critical and careful eye when it comes to tools of all kinds but this truly will blow you away [although for your sake, I hope not literally!]. Get the 12 pack of gas canisters and stash them for use.
