GrillPro 91655 Stainless 12-1/4-Inch by 18-Inch Professional GriddleI've owned this griddle for a few weeks and can say that it works best over a heat source that can heat the entire griddle uniformly. When using over a camp or kitchen stove only the area right above the burner gets hot. And that area can get extremely hot while the other areas do not get hot enough to cook.

There are a couple things you will need: a griddle scraper and a cleaning pad such as the synthetic steel wool cleaning pad by Gator #7318 gatorfinishing.com. I use these to clean the burn stains. The cleaning pad was the only thing that would get the stains off after my first use overheating and burning the butter I was using for some eggs. I have an infrared thermometer that I use to measure the temp of cooking surfaces that works fine on dark surfaces, but doesn't show the correct temp on this shiny surface. Thus it was a lot hotter than I thought. Now I rely on the sizzle of drops of water to give me an idea if the surface is hot.

Looks like I will be using this to cook over a grill and not a stove. My guess is that this would be true for any stainless steel griddle of the same weight.

I agree with the other review that this does not work well on a camp stove. I was hoping for an even temperature but found that only the areas directly above the burners got hot. I also found that they got 'extremely' hot so you had to really watch what you were doing. I used this on two camping trips and on the second one, all of the metal on the bottom that were welded on to bring the griddle off the burners a bit fell apart so I then had to use the griddle directly on the camp stove burners. Very poor quality. I got one good use out of it and will probably never use it again as now it gets even hotter then it did with the metal brace lifts underneath and I'm not sure how to get those welded back on.
