Nordic Ware Oven Essentials Indoor and Outdoor Smoker
Yes your house will smell like Famous Daves or your favorite BBQ smoked food place. I'm not sure why this is a "bad" thing. I cook soup, house smells like soup, bread, house smells like bread, steak.. well you get the idea.. thats what happens when you cook.TIP: Make sure to wash everything as soon as it cools, then put a coffee mug or bowl of white vinegar on the counter overnight and it absorbs most of the "odor".. if you dont desire the smell.
And about that cleaning, I have used mine a 20+ times and no paint has come off yet, however if it does, it is a smoker and withstands a lot of heat, so I won't be too disappointed. It states in the instructions to line the drip pan with foil; however, I don't think that it specifies the bottom. WRAP FOIL AROUND THE BOTTOM OF THE DRIP PAN! If you don't, it will be difficult to clean. As far as I am concerned, this is as close to an indoor BBQ device as can be, and I'm not going to scrub all the little black dots off the inside of my outdoor grill.. Clean it yes, make it look brand new every time.. hardly. I use an SOS pad on the bottom of the drip pan and the inside of the kettle cooker (NOT ON THE FOOD TRAY!!!!) and it works just fine in cleaning. This IS a smoker and much of that residue on the inside is treasured "flavor" much like you would season a cast iron skillet. In fact the more I use mine the easier and better it gets. Most smoker's require you to "season" it anyway.
It is easier to use on gas than electric. I took mine to a friend's house to BBQ ribs and she has electric. My drip pan did scorch very badly (beyond repair). If you use electric MAKE SURE to not turn the heat more than medium, and babysit it well the first couple of uses until you "learn" the cooker and settings. I went to the Nordic Ware website and emailed the company requesting to purchase an additional drip pan due to the damage I caused to it. They responded very quickly and are sending me a replacement drip pan for FREE!!! Whooooo KUDOS to Nordic Ware for that.
I will say that I took a star away for the fact that removing the food tray is difficult if you need to remove it during cooking for anything. In fact, it is difficult to remove period, hot or cold.
I have read many comments about the wood chips burning up too quickly and the smoker only giving a mild smoke flavor. The chips are only needed to burn out once, you don't have to keep adding more. The instructions say to use a small amount; too small of an amount in my opinion. I use more chips than they recommend, about a 1/4 cup. This is really just going to depend on how "strong" you want the smoke flavor to be, as well as, what you are cooking. You also should close the vents completely for dry smoking and most of the way for wet smoking to retain the smoke inside the smoker so that it is in the meat/food and not the house. The most important thing is to not open it for at least the first 30-45 minutes, or until the chips have burned and the meat has absorbed all of the smoke.
When cooking with this smoker, use the recipe book as a guideline, not literally. Most everything I have made so far cooks in significantly less time than that listed in the recipe book that comes with it. As with most things, you have to learn how to use it and what you like by trial and error. So far, even when I have made mistakes (when I scorched my drip pan), the meat still comes out juicy, tender, and tasty. I don't recommend "wet" smoking anything. I have tried this several times and have not appreciated the results much at all. The meat tastes just like it sounds like it would... like "wet" smoke which isn't very appealing to my pallet. It is still tender and juicy either way.

This thing imparts so much smoke flavor it's insane. I smoked a 1 lb pork tenderloin in it to make low fat pork bbq. It only took 40 minutes and used 2 tablespoons of woodchips. It had an incredible smoky flavor all the way to the middle. Everyone agrees that it tastes better than most "bbq" places. In my opinion, there wasn't much smoke coming from the unit. I don't have an exhaust over my oven so I just opened a window. The house smelled wonderful, but it wasn't smoky like when you fry bacon, there was no visible smoke in the kitchen unless you look directly at the smoker and watch for the little wisps. The smoke detector didn't even go off.My wife, however, complained that the smoke was burning her eyes. So that's why there are such varying reviews, some people won't even notice smoke, some people are overly sensitive to it.
If you have an outdoor smoker, don't buy this thinking you can replace a real smoker. Nothing's better than a charcoal smoker. I, however, live in a condo and can't even have a grill, so I'm thrilled to have smoky tasting meat.
Some tips:
Line the drip pan with foil, and wrap it around the outer edge. Trust me, you need to do this step if you're cooking something fatty.
Brine your pork/chicken first. I make a brine with kosher salt and brown sugar and brine it in the fridge 1 hour per lb. It keeps the meat juicy and allows it to cook faster.
Use a dry rub! Leave it on for a day before cooking. It will lend so much flavor to the meat.
Only use woodchips that are designed for this thing. That's not to say you have to buy their brand, but buying big chunks of woodchips like the Jack Daniels chips won't work because they need to be almost like sawdust to work in this.
Keep an eye on the temp. I kept mine right around 200, but it required adjusting the heat several times during the process. You have to adjust the heat depending on how much meat you have.
To get a decent bark on the meat, I empty the drip pan halfway through, and add more chips at the same time. This creates a more dry environment, and doesn't give it a "wet smoke" taste.
UPDATE: I've now used this smoker about 6 times. When I do rib tips they do get pink from the smoke! Not bad for about 2 hours of use and use 3 tablespoons of hickory. Everybody was very impressed that they came from an indoor smoker.
Also, don't expect this thing to look new after using it. It's a smoker. It's going to get black inside and there's nothing you can do about that. It won't hurt anything, just wash it out after each use to get the loose stuff off.

Just received this set in the mail. First Impression is that it's even more beautiful than it looked on line. Outset seems to be a cut above the rest of the field in grilling tools. I actually only got the whole three piece set because it was the same price, on sale, as the tongs alone. Was going to just get a set of Xtra long OXO stainless tongs, and saw the Outset Jackson's, which have same lockable design, but the sweet rosewood and extra length. So far so good, I'll update after I use them for a while as to the quality. I think I might just grab a few more sets of these to give as gifts for discerning grillers on my list.I thought they were very eye appealing, but was disapointed with their ability to pick up things. First off, this is not an expensive kitchen appliance and it is apparent in the design; no on/off switch, plug into outlet equals on, unplug equals off. There is really no frills to this device, which you would expect at this price point. I purchased this device in order to make waffles every now and again at home and liked the fact that it was capable of making other food items. As far as form, it is small and will fit easily in a drawer or cupboard when not in use. The 6 no-stick inserts come with a rack which is also nice for storage in a cupboard. The inserts snap into place and are removed easily. As far as function goes, it cooks really well and will turn out approximately 2 servings at a time with a 3-5 minute warm up and an average of 5 minutes to cook just about anything. I would say that this device is best used for waffles, eggs, grilled pocket sandwiches and panini sandwiches versus more complicated meals such as raw chicken breasts. I feel the price is worth it for the versatility as well as easy clean up and I use it about twice a week for a quick grilled sandwiches or waffles on the weekend. Some may not like the fact that you can only turn out two at a time, but really how many grilled cheese can you make at once in a frying pan? And those don't seal the edges. Good product considering you are not dropping tons of money, the versatility of items you can make and small size for storage. You are basically spending about the same as a toaster oven, so don't expect it to mop your floors too. If your expectations are reasonable, this is a convenient little device.I cannot believe that such a reputable place would keep these grills on their sites. I recieved this grill for Christmas and was so excited because I had seen it on TV and it looked perfect for my husband and I.I used it a few times and it grilled perfectly. However, after about 3 times when I plugged it in nothing happened. I cannot tell you how disappointed I was. I went to the computer to see if anyone else had this problem and lo and behold their were hundreds of customers with similar problems. It seems to me that if a company had recieved numerous complaints about a product they sold (The Big Boss Grill) they would look into what was causing the problems and either fix it or take it off the market. I would have sent it back and I still might, but the shipping charges cost almost as much as the grill. Since most people don't send it back precisely for that reason the company makes out. Amazon I have done a lot of business with you in the past and I have been extremely satisfied with everything I purchased. I know people sell things through your site and if something isn't right it is up to the company that is selling it. However, if I were you after reading all the negative comments about the big boss grill I would not accept the site that was selling that product. What was I thinking? This thing would be okay if you are cooking for 1 or 2 people. Any more and everyone would have to eat at separate times.I only use it to cook omlettes and waffles now. The grilled cheese has the crusty ends which my kids do not like. When I cooked chicken on it, I have to cut the breasts into tenders. It takes closer to 9 minutes for 1 chicken breast cut medium thickness. If you are cooking for four or more, someone is getting a cold piece of chicken.
Also, last night I cooked a breast in it, I noticed that all the juices had nowhere to go. So much of it went under the plate. I DO know that electricity and liquids don't mix.. I hope it isn't damaged now. So now when I cook chicken, I will take out the old frying pan again..
I haven't made a donut, hamburger, or a pannini yet. Donuts look real small though. I do like the way the omlettes come out, but it takes closer to 9 minutes, than 5 minutes as suggested. I feel french toast would probably work, but again, only 2 at a time. 5-6 minutes each.. Good Luck!
Also, I recieved a phone call telling me that since I was such a good customer , that I would be recieving $40 in free gas vouchers in the mail, along with a bunch of other discounts that I could use for a try out period. It would cost me $24, after the first month. If I want to cancel it, just call the number. I did not recieve this envelope, therefore cannot camcel. I called Big Boss Headquarters, and they told me that they have nothing to do with this promo. How dare them give my credit card number to someone else. Now I have to go to my bank and fix this mess.!!
Anyway, if you want to eat waffles or omlettes for one or 2 people, this is for you. I won't use this for chicken or grilled cheese ever again.
I wish I could get my money back.. Maybe I'll stop payment.

I live in a small apartment with a very small kitchen, and I have an even smaller amount of time to clean a grill. I've had contact grills before (the George Foreman line is so far still the best IMHO), but when you need to save both space and time this is a good buy. It's not great, but it does work once you figure out its quirks. The indicator lights are a great touch so I know when it's come up to heat. Also, the dishwasher-safe plates are a definite plus.Some things I've found:
-The heater does not have the wattage to deal with frozen hamburger patties. It will, however, work great on fresh ones.
-If you're a culinary nitpicker, the omelet plate won't make a true omelet. However, it does make a tasty breakfast "scramble."
-The grill will hold grease away from the meat, but you need to drain it between individual servings. This can be dangerous to say the least. (I use a set of nomex gloves...good luck finding those.)
-The griddle is good, but not great. It might make a good supplemental griddle for, say, when you have a lot of relatives over and you've got all burners going on the cook top.
For a general-purpose all-in-one appliance, this is a good design. However, it is not the best for all tasks. A good starter, say for the college or graduate student, but not for someone who wants a serious contact grill.

Lodge Logic L410 Pre-Seasoned Sportsman's Charcoal Grill
I ordered this heavy (33 pounds) little jewel from Amazon a week ago, got it much earlier than expected and tried it out the day I got it. I now have 4 grills: An "oil barrel" type that is perfect for when the family tribe shows up, 2 Weber kettle types in different sizes for weekend entertaining and now the Lodge.I've had several cast aluminum discount store hibachi's over the years and after the wooden handles fall off, the legs become impossible to tighten and then the "adjustable" supports for the grill crack. I don't see that happening with this hibachi.
Let the grill pre-heat, spray it with PAM and then enjoy the meal. The heat is even, cooking times may be a bit faster than you think, but the dish will be excellent.
HOWEVER! If one is cooking on a wooden deck, as I do, invest in some bricks or concrete pavers to go under the feet. Like all cast iron, this sucker retains heat and you don't want to burn your house down while entertaining guests.
Look for the book "The Honerable Hibachi" by Kathryn Popper. An excellent guide/recipe book.
I wonder if this would be safe to use in a large fireplace in winter months. Any ideas?
I'm thinking about getting another Lodge and then finding a home for the smaller Weber.
Get one and then enjoy your hibachi.

I've now had the Lodge Hibachi for 4 months and typically use it several times a week. Clean-up is even easier than it was when new. Remember to put a little olive oil or PAM on the grids first and the seasoning improves. In cold, rainy weather, the hibachi fits and cooks nicely in my fireplace (thanks, Ukiechris!), but I crack a window when I do that.
Although quite heavy, it's a great picnic grill and will easily cook chicken, steaks or burgers for 4 people. My Webers must think I don't love them anymore. I do, but the Lodge is perfect for 1-4 people and chicken cooked on the hibachi has a flavor my kettle or barrel grills just can't match.
Besides cooking for that tribal gathering, I'll let you know if I find something the Lodge can't do.A great little grill! Though I grew up with weber, kettle type grills, and even tried a trash-picked gas grill, I have never used a grill that cooks so consistently well.
I use mine with hardwood charcoal -this gets the temperature hot, fast. As soon as the charcoal is lit up I spread the coals outward, drop the grill on top (on the high side of the legs), and let it warm up for a couple minutes. Once the cast iron is warmed up the heat radiates evenly across the cooking surface. To check the temp, I hold my hand 4 inches over the top of the grill -if I can hold it there for more than a couple seconds, it is not hot enough. Without adding charcoal, I usually have just enough time to do two batches on the grill.
For steak, I leave the meat on for four minutes each side. When I pull it off, it has a nice crispy crust, and a perfect pink inside. When I cook burgers, I leave them on five minutes each side. And, chicken, I'll take a boneless, skinless chicken breast and pound it flat with a fry pan before tossing it onto the grill (this prevents the common problem of dry on the thin end and too pink on the thick end). Four minutes each side, and when the milky juice flows out when pricked with a fork, you know that it is perfect and juicy. I cook fish in a similar fashion. A little flavor tip: Some coarse kosher salt and fresh ground black pepper added to your meat before cooking is usually all you need to have excellent results.
Now, for roasting or smoking, this is not the product for you. Since there is not a lid it would be impossible to cook a whole chicken, for instance. Buy a weber for that. But a weber will never acheive the kind of perfect steaks and burgers that you get from one of these.
We have had our grill for three years now. It has lived outide our home the entire time in all kinds of weather rain, snow, ice, or sun. And I was grilling in all conditions. I have performed absolutely no maintenance -never oiled it, never cleaned the ashes. It seams perfectly happy in this state of useful neglect.

One of my friends received this as a gift to use for tailgating parties. After a few uses, he decided it took to long to cool off, was to hard to clean and had put it back in the box with the intention of setting it out with the trash! Fortunately before he did, he saw me looking at it on this website and asked if I planned on buying it. I said yes and he said don't because he had one that he was going to throw away. If I didn't mind it being used and a little rusty, I could have his. I took it. It was rusted but I scrubbed it, oiled all the parts, and seasoned it in the oven (it was still cold outside so I couldn't fire it up)!This little grill came in so handy when we bought another house in the spring and removed the stove to make way for the new one. I cooked on it everyday. What my friend found as a disadvantage, I found as an advantage, it stays hot for a long time!
I grilled everything, half smokes, kabobs, burgers, chicken, veggies, fish, etc. . . and nothing stuck! I also grilled ribs on it. I sliced them into individual ribs, placed them on the grill, and covered them with foil (crimped the foil around the rack with tongs). They turned out really good. I used my little cast iron skillet on top of the rack to scramble eggs, and blacken steaks (lots of coals needed for that).
The grill is very durable and as long as it is properly taken care of will provide many years of grilling pleasure! I really like it because the grill rack can be put in the sink for easy clean up and as long as it's properly seasoned, I don't have to worry about my food sticking to it.
I also have a 22" weber kettle grill that I use when I want to grill a lot of food or large items. If I don't, I set this one inside of it on the grate and use it instead. This is an excellent grill for a small household, and I recommend it over the other hibachi type grills. It's great for camping but keep in mind that since it's cast iron it takes a long time to cool down, so start grillin' early!

I love using the Sportman's Grill. It gets hot fast and temperature control is easy with the damper and two-position grate. I keep mine seasoned with pam and keep the water out by covering it with an old cookie sheet while it cools down.This grill is definitely for hardcore charcoal users. I can see where less experienced grillers might not be able to get good results. If you need a thermometer to cook a steak, this is not your grill. If you cam measure temperature by how long you can hold your bare hand over the coals, this grill is for you.
I only gave it four stars because I don't find it very easy to clean out. All of the loose parts have to be removed (grill, charcoal grate, damper door, and the front door) to get all the ash out. Also, I find the carrying handle is nearly useless. The grill is unbalanced so that if you try to pick it up with all of the aformentioned parts attached, it tips over and all the parts end up on the ground. Be careful.

2) Preseasoned, so it's easy care, just wipe down with an oily paper towel, and remember to cleanup the ash after use.
3) Simple effective no-frills design.
4) Can be used as an outdoor firepit.
5) Sturdily built.
6) The oval shape is much more space-efficient than the round one:
a) for finding somewhere to put it,
b) the cooking surface you can fit 6 burger patties on this, flank steak, a full rack of ribs, good sized slab of salmon...(not all at once!) plus two or three medium potatoes wrapped in foil next to the coals. You can cook for 2-6 pple.
c) in arranging the coals for the right type of heat for what you want to cook.
Cons:
1) No lid -For a lid, I would suggest the Cajun Classic brand cast-iron oval dutchoven flipped upside down.
2) Matching oval-shaped Lodge cast-iron Dutch oven is discontinued (could be used as lid, griddle and dutch oven).
3) It is heavy
4) It is ugly
5) Design too basic? Could be made more user friendly with height-adjust option during cooking. Currently, you have to flip the grill over to change height.
You have to really know your coals. Not very charcoal-phob friendly.
6) Limited use:
a) Cast Iron retains heat and cools slowly, so not very pratical for anything where you might have to move it before it cools.
b) Needs to be baby-ed: water + ash = lye, which will eat away at the cast iron bottom causing rust. So no open grilling in a snowstorm, during unstable weather, or leaving out overnight to cool. You have to go back out when it cools to put it under some sort of cover.
Needful accessories:
1) Oval dutch oven to be flipped upside down and used as a lid.
2) Chimney starter.
3) dutch oven lifter which can we used to lift the grill grate and adjust the height while grate is still hot.
4) alternately a pair of heat resistant gloves.
5) 2 pairs of heat resistant tongs, one for fiddling with the coals/ash and another for cooking with.
6) The nylon cover to help protect it from weather (better than nothing, but a garage or shed is best).
Conclusion:
Love it for its efficient size and shape, great sear marks and flavour. Hate it for when the sky threatens to snow/rain.
Precaution for those who live on the shore:
I live by the shore and have salt water mist roll in overnight. I MUST move it into the shed, as moisture/mist/condensation will collect even under the protective covering. Also, a well oiled and cleaned grate will rust in the salt mist if left out overnight.

You can't always be traipsing outside to use the grill, unless you live in the right part of the world for it or else have a very sheltered area. I love the way this grill pan brings the grilling indoors. True, it's got a small cooking area (21 centimeters square, just over 8 inches) but that's big enough for two hamburgers or a couple of small steaks or some vegetables. The pan has rather deep ridges, so the food rests above any fat that cooks out of it--and your food is embellished with very pretty grill marks.This is a product that really begs the reviewer to mention pros and cons, so I will mention the most notable of them, starting with the negatives so I can finish with the good points:
CONS:
* This pan is heavy! Six pounds.
* Comes without a whisper of information on care or use of the product (this is not acceptable).
* The stainless steel handle stays cool and is easy to hold, but it seems to be just a bit loose from the get-go. Anyone have a foot-long screwdriver I can borrow?
* Speaking of the handle, does it have to be QUITE so long? I have room to store it, but do you?
* Takes some soaking and scrubbing to clean.
* The sides are low and there is some spatter, though less than I expected.
* Arrives from Amazon in a carton that's almost as big as a kayak.
PROS:
* It's sturdy; not going to warp or dent or deteriorate. Investment kitchenware.
* It's preseasoned and cooks beautifully with minimal oil.
* Works on any kind of burner (mine is electric).
* I love my black one but it does come in several bright enameled colors too.
* According to the Bodum site, you can put it in your dishwasher (if the handle fits).
* Though the price is steep, it compares favorably to other top-quality brands of cast-iron cookware.

Linda Bulger, 2011 I love this because most of the grease that used to be on my steaks is now at the bottom of the pan. The only thing that would improve this is if they made a lid for it, because I feel like the grease is floating around the kitchen every time I cook meat without a lid. It is really well made though and should last a lifetime. Don't drop on your toes or you might break them since this is really heavy! If it wasn't this heavy though, it wouldn't last long. It's really easy to clean too.

I've never been a big fan of grill pans I've always found that they don't sear well and are generally disappointing when compared to grilling on a real grill. The Bodum Chambord is the first grill pan I've used that works as advertised. The substantial cast-iron build means that once the pan gets hot it retains it's heat so it cooks the food faster, the small size means that it is easy to store in the kitchen and the grilling surface cleans up very easily. I've grilled everything from veggies, to burgers and dogs to sandwiches and they all came out great.If you've never used a cast iron pan before they take longer to heat up so you have to be patient before you put your food on. The upside to this wait is that the pan also takes longer to cool down. While this pan isn't stuitable as a total relacement for a grill it's a nice option if you just want to grill indoors. I couldn't be happier with this pan. I am a vegetarian so I am not cooking steaks or chops on this pan, but I do cook things like veggie burgers and grilled cheeses, etc. I like the pan, although there are two things about it that are somewhat bothersome: you have to be extremely careful to cook your food evenly on it, otherwise the food easily burns and this makes for a difficult clean up. And, speaking of cleanup, the pan is difficult to clean in general, especially when food gets between the grooves; the other night I cooked some sauerkraut next to my veggie burger, and it was a minor nightmare cleaning the sauerkraut remnants later. So as long as you're careful not to let items burn and as long as you're choosy about only cooking items that won't be terribly difficult to clean up after, this is a good pan. I use it often and like it, even though I feel like I have to be especially careful when using it, in a way I wouldn't with another pan.

1) If you're cooking meat, it keeps it above the oil. And it cooks it evenly, too.
2) The secondary handle makes it easy to lift and drain oil out of the pan.
3) Grilling vegetables is very simple -and they come out looking like I went to the trouble of borrowing my neighbor's barbeque.
4) Clean up is quick, *if* you wash the pan while it's still warm. (Don't allow it to sit with grease on it. No. Do not. It's NOT fun cleaning it cold. I speak from experience.)
5) Makes neat grilled sandwiches; they look " professional and everything." The kids also announced said sandwiches looked Expensive. (I made paninis with sun-dried tomatoes and cheese.)
6) The sides are low enough for easy serving.
7) Good, solid grill pan for the price.
8) At 8.3"x8.3" it's the perfect size for most stove-top grilling.
HERE'S THE CON:
1) This pan is very heavy. I'm disabled, and I must have help lifting and cleaning it if I'm tired and/or in pain.
